AbstractThe objective of this paper is to present the process of construction of a narrative on heritage. It starts by analyzing the origin of the concept of heritage, relating it with those from the official UNESCO documents and the Federal Brazilian institutions, focusing on the Latin American reality, inspired on the final documents of each meeting of the Regional Subcommittee for Museology in Latin America and the Caribbean – ICOFOM LAM. Such documents have contributed to the development of an official discourse about heritage. An extra-official discourse also results when considering the relationship between each individual and/or community with their heritage through senses. This movement has permitted the development of differentiated relations and narratives on the topic. As a case study, the paper focuses on the relationship of the inhabitants of the city of Paraguaçú, in the Southern part of the State of Minas Gerais, Brazil, with the marolo -a typical Brazilian fruit from fenced areas - as the base of several recipes, transmitted along generations. In December 2009, the Council of Cultural Heritage in Paraguaçú has declared the recipes based on this fruit as Immaterial Heritage of the County. Key words: Museum. Museology. Heritage. Discourse.
