La raiz prehispánica de la culinaria en la región Coriana

AbstractThe following presentation is the result of a research that sought to establish significant aboriginal elements remaining in the culinary arts of the area now considered the current Falcon State, formerly called Coriana. The objective was to propose an exhibition from everyday items still surviving in our culture -such as food and utensils used for its preparation, protection and service- that value the contribution of Indian ethnic populations who inhabited the present territory, highlighting their adaptability and creativity in the semi-arid environment that dominates the region. To achieve this goal, this work required the research support from the Anthropological, Archaeological and Paleontological Research Center (CIAAP) of the National Experimental University Francisco de Miranda (UNEFM), created in 1977. The Centre has been able to gather a vast information on aboriginal settlements of the Falconian region which refer to the development of corn crops, some grasses, tubers and squash among others. Not only do they use the fruits of these products, but also other components of the plants such as leaves, flowers and roots. To conserve them, they developed storage spaces (silos) and used techniques such as roasting, smoking or drying. Texts have been compiled with information on many preparations that have been preserved in some Falcon localities. An essential contribution to this proposal was the collection of pre-Columbian ceramics and stone found in CIAAP, associated with the Historical Museum of Ceramics and Popular Earthenware (MCHLP) which also provide valuable information explaining the features and possible uses of the artifacts created in different development periods of the ethnic groups that inhabited the territory, in particular, those artifacts intended for culinary use. With such material of reference it waspossible to envisage the lifestyle led by our prehispanic ancestors, who inhabited the north-central region of Venezuela and also to what extent it can be appreciated in everyday life today.
